I am trying to design a simple Pizza oven either gas or electric as heat source, but would like to know an ideal route of the ducted air from heat source to evenly distribute the interior of the oven via an internal fan, bearing in mind that I am constructing the oven with sheet metal (stainless steel) the design of air duct to be incorporated whilst in the construction stage, any advice will be appreciated, ex pat now residing in Brasil, trying very hard to earn a lttle money
A domestic convection oven, like in a home has the fan in the back pannel. The fan is a propellor fan and mounts in a protrusion in the back pannel. The return air goes directly into the fan blades and discharges immediately and radially thru the series of round openings in the side of the fan enclosure - that protrusion. With this arrangement air blows radially across the back pannel. It would be very easy to draw. The air blowing radially across the back will flow along the sides and return back thru the middle.
In this case the electric heating elements are already in the oven on the top and bottom. Heating elements could also be duct- mounted as in a clothes dryer, but the fan arrangement would be different.
Any arrangement where you can discharge the air at a high velocity will create a general circulation pattern. The positioning of outlets will depand on the size and shape of the oven. It does not really matter where the return is located. The return could even be located right next to the high velocity supply as is the case here. This simplifies the design. You do not want the air blowing directly toward the door nor directly on the food.
A single non-enclosed or parrtially enclosed centrifugal fan wheel mounted on the back pannel with the shaft extending through the back pannel to the direct drive or pulley drive motor would also work if the oven is not deep. Again the discharge would be radially across the back , along the sides and the return in the center.
Be careful in your selection of the fan motor so that it has insulation designed for high temperature.
